Pancakes

A gluten and dairy free version of my Thick & Fluffy Pancakes inspired by IHOP.

  • Prep: 10 mins
  • Yields: 14 pancakes

Ingredients

3 cups Gluten free self-raising flour

3 cups Almond milk

3 Eggs

1 1/2 cups Unrefined sugar

1 tsp Vanilla extract

Directions

1Put flour in a mixing bowl and slowly mixing in the almond milk.

2Beat the eggs in

3Add the sugar and vanilla extract

4Mix well together until a smooth batter is achieved.

5Heat a pan, griddle...with or without oil/fat

6Pour some mixture in the pan

7Turn when bubbles form & pop on the surface

8Cook for 2-3 minutes each.

9Serve

Serving suggestions: dairy free spread & maple or agave syrup, chocolate spread, nut butter, ice cream...
