Pilaf is a traditional Indian rice dish cooked in a seasoned broth

  • Cook: 30 mins

Ingredients

1 chickpeas (drained)

1 peas (drained)

1 cup mixed frozen veg

1 chopped tomatoes

2 tbsp korma paste

2 tbsp red lentils (rinsed)

1/4 cup long grain rice

1 pint vegetable stock

Directions

1In a wok, fry the chickpeas, peas & frozen veg together for a couple of minutes

2Stir in the chopped tomatoes, korma paste, lentils, rice and just over half of the stock (add more if necessary)

3Bring to the boil, stirring occasionally, then allow to simmer until your rice is cooked and you're left with little liquid.

4Serve, enjoy.
